Entry level wine for a good aperitif on a Thursday evening.
Thomas Bachelder
is a passionate winemaker who produces a wonderful chardonnay that is perfectly balanced between freshness and smoothness. It is mineral and has a very generous fruity nose with pineapple aromas of white fruit, and a little whiff of sesame notes and peanuts. It is perfect happiness in a bottle.

Wine for Saturday dinners with friends.
I always loved this product … Year after year, this remains an accessible wine of very high quality. Despite the death of Marcel, the soul of the producer and of this wine, it has always remained perfect. Icon of the name, this gamay-based wine must breathe in a carafe for some time before drinking it. You will get notes of cherries, violets and liquorice. It is a wine with a great “drinkability”, which means you have to buy at least two or three bottles of this delicious nectar..

Ruinart Blanc de Blancs Brut

Wine to be kept in the cellar for the future.
My colleague Maxime Desrosiers and I went to visit the Champagne region a little over a year ago. We stopped at Veuve Clicquot, Krug and Ruinart. What a memorable trip! We were fortunate to be received by these houses, enjoyingo certain privileges such as tastings and vineyard tours. We also visited the crayères, chalk pit used as cellars, dug manually by humans before the war, several kilometers under the city of Reims. Today many homes store their champagnes there…

This is my favorite champagne and the best-selling one at Coureur des Bois Bistro Culinaire. Very elegant, this 100% chardonnay champagne has the beautiful nose of lemon, citrus, tropical fruits and jasmine and leaves in the mouth a lot of texture with notes of pear and ripe peaches. Of great freshness and minerality on the palate, this champagne can be kept in the cellar for several years and will delight the most demanding guests. An exceptional product…

Ian Purtell
Guest sommelier

This week it is an exceptional sommelier that advises you. Ian is also a first-hour user of our software and helps the Alfred team in the development phase.

After training as a chef, Ian decided to reorient in restaurant service to add strings to his bow. Born in a family environment where food and wine were the center of attention, Ian evolved towards a sommelier class. Then he decided to perfect his skills as consulting-sommelier and graduated from The University of Suze-La-Rousse..

Travaillant Working in restaurants since the age of 16, Ian has occupied alternately various management positions. Before occupying the direction of restauration at the Hôtel Rive-Gauche Refuge Urbain, he held management position at restaurants L’Aurochs, Le Vestibule, the Cumulus and as consulting-sommelier at La Tomate Blanche. He subsequently held a consulting- sommelier position at Château Bromont.

Au Over time, many of his wine lists have been awarded prizes, both regionally and nationally. The list of Château Bromont obtained the title of Best List of Quebec wines and mentions of excellence from Wine Spectator in 2004 and 2005, in the category “Best Award of Excellence”. The list at La Tomate Blanche won the title of best list of the South Shore in 2008. Today member of CPHA, Ian and his team manage the wine list at the prestigious Coureur des Bois – Bistro Culinaire an Alfred partner.
