Wine for a good aperitif on a Thursday evening.
Here, first, a beautiful white Chenin from an independent winemaker. The cool climate along the Loire brings freshness accompanied by a wealthy palate which makes this wine great to continue to the table. The nose has fruity notes of quince and ripe apples, and notes of honey and flowers. A well-integrated oak component is felt and helps give it a good amplitude in the mouth, This wine has an atypical style when you know the most thirst-quenching wines of the appellation Saumur..

Schubert Block B Pinot noir 2013

Wine for a Saturday dinner between friends.
Born in Germany, Mr. Schubert traveled the world to find his perfect terroir in New Zealand. This wine is one of the finest expressions of New Zealand Pino Noir I tasted in my career; this wine is as great on the nose as a great bourguignon. The notes of cherrues, spices  and roasted nuts prepare the palate that is all silky with discreet tanins and an acidity typical of Pino Noir. You could serve it with duck roast accompanied by mashed Jerusalem artichokes and candied cherry tomatoes.

J.L. Chave Sélection Hermitage Blanche 2012

White wine
France (Vallée du Rhône)

Wine to put in the cellar and keep.
What can be better than having some great vin de garde white wines in your cellar. This assembly of Roussanne and Marsanne with the mythical appellation of Hermitage is a testimony to the great wines of the Rhone. To be opened in 2020 and ideally decanted 30 minutes before serving. The nose is initially shy but affirms itself while breathing and reveals aromas of saffron, white flowers and beeswax. In the mouth, the style is full-bodied with a fat and enveloping texture. It is an elegant and unique wine in the landscape of the great white wines of the world.

Bertrand Eichel
Guest SommelierOf Alsatian origin, Bertrand Eichel started out in the family vineyards. Passionate about food, from the age of 14, he followed training at from the age of 14 the Lycée des métiers de l’hôtellerie et du tourisme Alexandre Dumas in Strasbourg and specialized as a sommelier. In 2003, he settled in Quebec where he perfected his knowledge and expertise. Bertrand Eichel has evolved over 10 years as a the head sommelier at the legendary private club 357C, located in Old Montreal. He is also the author of “25 vins, 100 recettes”, is a speaker and moderator at tastings. In terms of honours, Bertrand Eichel won the Carte d’or for Auberge Sauvignon Mont Tremblant in 2004, the competition of the Best Sommelier of Quebec in 2009 and the Best Nez du Québec, 2014.

He now operates in the field of education since 2009 to offer his professional experience to future Canadian sommeliers.
