Ayala Blanc de Blanc Brut 2007

If you are looking for something unique to offer for Father’s Day, here’s a gift that will be greatly appreciated. The Ayala Blanc de Blanc Champagne is produced in limited quantities and only in exceptional vintages like the 2007. With a bright and crystalline gold color, the nose opens with floral notes of citrus and white peach with a hint of brioche. It has a pure palate, fresh and elegant, with flavours of pineapple and apple-pear, culminating in a creamy, mineral finish. Excellent as an aperitif, it is a feast of a wine. I would like to thank Richard Carrier of the OENO house for the discovery of this excellent vintage.

Penfolds Bin 407 Cabernet-Sauvignon 2013

Southern Australia (Various areas)

Made of grapes from several areas of southern Australia (the Barossa Valley, Coonawarra and Padthaway), the 2013 407 is, in my opinion, the most successful of all its vintages since its launch in 1990. Its color is a dark ruby with tints of garnet and a powerful nose of wood, menthol, cassis and cherries (cherry blossom) rises from the glass. The mouth is always full and ripe for this intense wine with refreshing acidity and firm tannins that end with a final black fruit compote and bitter chocolate note. This is certainly a grand wine.

L’Aventure Côte à Côte 2013

Stephan Asseo and his Domain Adventure, in Paso Robles, California, probably don’t need any introduction. This great friend of Quebec is a regular of Salon des vins américains, and we all know his enthusiastic personality. His Coast to Coast 2013 is a blend of Rhodanian grapes that age 14 months in French oak barrels. With a dark ruby color, this wine offers a floral nose (violets) with raspberries, cassis and pepper in which we feel the Syrah. It is distinguished by a full-bodied and elegant mouth with an impressive fruity and good balanced concentration in the finish. It is a wine of great beauty, to drink now or leave in the cellar.

Grape varieties : 40% Mourvèdre, 30% Grenache, 30% Syrah

Best drinking period: 2016 to 2025
